Probably animated stuff like Wall-E (I haven't seen the DVD for comparison, but the Blu-ray is great).

If you are into the Bond films at all i've been very impressed with what they did with the older ones.  Dr. No looked quite amazing.  The others haven't disappointed.

And i thought Casino Royale looked excellent (though i don't have a DVD to compare it with).

Sound-wise Master & Commander: The Far Side of the World is awesome (but then it was awesome on DVD also).

And i will upgrade the Pixar films automatically.

Try and act surprised Xmas morning.

The Dark Knight's IMAX sequences look amazing, but the rest of the movie was transferred from the IMAX blow-up instead of the 35mm for some reason & has some problems with ringing as a result

The most amazing difference I've seen is on BBC's Pride & Prejudice. The improvement from DVD was incredible.

Film-wise I would have to say:
Mummy trilogy
Matrix trilogy
Underworld trilogy

In general, when treated with enough care and a good encode, any blu-ray will look better than its DVD counterpart. Even for blu-rays that get a so-so review in the picture quality department (like 2.5/5), you'll still read in the reviews that even though the picture quality is not up to par, it still looks better than upscalled DVD.

Now, if you're interested to see the best blu-ray has to offer in picture quality, then I can honestly say you can't go wrong with anything 3D animated (especially everything Pixar but also DreamWorks), since most of those are a direct digital transfer ... there was no 'film' involved. Some people dislike grain (which is a natural by-product of using film) so they tend to prefer such direct digital transfers.

As far as 2D animation goes, it really depends. I've seen some stunning transfers (Gin-iro no kami no Agito and Paprika come to mind) but there are other instances where 2D animation will show banding or haloing ... it depends on the source material and the way it was treated.

As far as film is concerned, anything IMAX will look great: Dark Knight is a good example, which has a beautiful filmic picture quality and the Imax scenes just look stunning. The same goes for the Imax version of Transformers RotF (Walmart exclusive).

If you like beautiful transfers that stay true to the original, I can also recommend these discs and sets: Pirates of the Caribbean trilogy, Spider-Man trilogy, IronMan, Star Trek TOS season 1-3, Blade Runner (beautifully remastered!), Sin City, Lost, Matrix Trilogy, Casion Royale collector's Edition, Chronicles of Narnia movies, I, Robot, Chronicles of Riddick, Coraline, Braveheart, The Rock, Star Trek, Hellboy II, King Kong (remake), Transformers, Watchmen, The Forbidden Kingdom, Jet Li's Fearless, 2001 A Space Odyssey, Black Hawk Down, 300, Knowing, Rebellion (Japanese edition of Equilibrium), Indiana Jones & KotCS, G.I. Joe and many more. These are all movies I own and can personally attest to how beautiful they look.
